Vegetarian Burger Patties

Ingredients:

3 Tbsp oil
1/2 cup corn kernels
3 sticks of celery
1/2 tspn hing
1 tspn cumin powder
1 small grated potato
1 grated carrot
1/4 cup blended silken tofu
seasoning
1/2 cup breadcrumps or oats
1/2 cup chopped fresh coriander or parsley

Method:

1. Saute the oil, corn, celery, hing and cumin over medium heat until the corn is slightly browned and spices are aromatic.

2. Remove from the heat and add the grated carrot and potato.

3. Mix well and add the tofu, salt and pepper to taste, breadcrumbs or oatmeal, and fresh chopped herbs of your choice.

4. Mix well and shape into patties.

5. Place a lightly oiled tray and refrigerate for 1 hour.

6. Panfry the patties for approx 3 minutes per side. Makes approx 5 patties.

Hing (also known as asafoetida) is a distinctive savoury spice used to enhance flavour. You can buy it at Indian and Asian food stores. It is known to be helpful for alleviating stomach problems.
